Located in the Bordeaux commune of Sauternes, the vineyard has the most ideal growing conditions for this sweet wine style. The vineyard is planted with 80% Semillon and 20% Sauvignon Blanc. Intense berry selection of only fully botrytised fruit make it possible for one whole vine to produce just a single glass
The precious liquid spends 36 months in 100% new barrels. A very opulent wine when young, developing extraordinary complexity and exotic richness with some years in bottle. The 1997 vintage is regarded as one of the great years for Sauternes and d'Yquem in particular. At just 20 years of age, this wine is beginning to show layers of complexity, exotic and rich spices lace over some very poised acidity.
We will be serving a glass of this fabled with with its well known gastronomic partner: Foie Gras. A food and wine match that everyone should try once in their lives...at least
