I enjoy the idea of purpose. Having studied philosophy, there are many parallels with wine. 'Purpose' is the one that drew me in: everything has a reason for being; a reason for the way it is today. The thing about wine that is so interesting to me are the answers to questions like: Why does this wine taste like this? Where does it come from? How can you tell?! There are so many tales a glass of wine can tell you if you know how to listen. The idea is that at Comptoir we will help you ask those questions and show you where to find the answers.

My true fascination with wine began long before I had ever tasted a fine wine. As a 17-year-old apprentice waiter, knowing very little about dining, I was introduced to a grand dining room, filled with guests in fine attire, celebrating their occasions with a mixture of the convivial and the elegant, all centred around a reverence for the art of dining.
An inspiring brigade of career waiters taking flight each service with an appearance of ease and grace, each with an ocean of knowledge about the fine details of the dishes and wines that each guest was enjoying.
This early fascination has stayed with me for the last 26 years. The dining rooms, the dishes and guests have all evolved. The wines and their details change constantly.
Wine is at the heart of my fascination and I hope to create an environment where wine is celebrated, knowledge and experience is shared not guarded, and guests are encouraged.
Comptoir will be that place.

Comptoir is a wine bar, bottle-shop, grazing place and wine consultancy under the one roof that’s set to open in Collingwood at the end of September 2016. The venue is founded by David Lawler and Tim Sacklin, two highly accomplished sommeliers who aim to create an intimate venue with the most seasoned sommeliers at the coalface. We’re seeking wine professionals to join our team.
Full time, casual and part time roles are available, with varying levels of expertise sought. The key people we seek are those who are enthusiastic and passionate about working with wine, and possess a sound knowledge that they are confident to share with our curious customers.
It will be a small, focused and intimate venue (without the punishing hours of restaurants). As a venue with multiple offerings (retail, wine bar, consultancy), it promises to be a dynamic environment within which to further develop your wine savviness.
