Get ready to buy some booze this September when sommeliers David Lawler and Tim Sacklin, late of Rockpool and Rosetta, respectively, open Comptoir Cellars at the base of Collingwood’s Oxley apartments.  The pair plan to distil their fine-dining experience into a wine store with a sit-in bar element.  Construction starts this week.  Lawler describes their proposed 200 to 300 bottle selection as “concise” with a big focus on classic winemaking styles alongside several delicious natural wines.  They’re in consultation with chefs and suppliers to nut out a food offering.  With no kitchen to speak of, expect wine-friendly snacks such as salumi, cheese and pickles, with one hot dish on the go.
