My true fascination with wine began long before I had ever tasted a fine wine. As a 17-year-old apprentice waiter, knowing very little about dining, I was introduced to a grand dining room, filled with guests in fine attire, celebrating their occasions with a mixture of the convivial and the elegant, all centred around a reverence for the art of dining.
An inspiring brigade of career waiters taking flight each service with an appearance of ease and grace, each with an ocean of knowledge about the fine details of the dishes and wines that each guest was enjoying.
This early fascination has stayed with me for the last 26 years. The dining rooms, the dishes and guests have all evolved. The wines and their details change constantly.
Wine is at the heart of my fascination and I hope to create an environment where wine is celebrated, knowledge and experience is shared not guarded, and guests are encouraged.
Comptoir will be that place.
